Ingredients

    eggs

  • 1

    cup sugar

  • 2/3

    cup pumpkin

  • 1

    teas lemon juice

  • 3/4

    cup flour

  • 1

    teas baking powder

  • 2

    Tbsp cinnamon

  • 1/2

    teas ground ginger

  • 1/2

    teas ground nutmeg

  • 1/2

    teas salt

  • Filling:

  • 1

    cup powdered sugar

  • 1

    stick butter softened

  • 1

    tbsp. vanilla

  • 8

    oz cream cheese softened

Directions

Sift together dry ingredients, set aside Beat eggs for 5 minutes, gradually add the one cup of sugar. Continue beating on low speed and add the 2/3 cup of pumpkin and the lemon juice. Gradually add dry ingredients to wet mixture and mix until combined. Pour into well greased cookie sheet pan with raised sides. Bake for 15 minutes. Turn out onto a clean dishtowel dusted heavily with powdered sugar. Roll up and let cool completely. Carefully unroll and spread with filling. Re roll and wrap in plastic wrap. Refrigerate or freeze
