Step 1

Quarter, core and very thinly slice cabbage; transfer to a large bowl. Pour water over cabbage and toss with tongs until wilted. Let sit 15 min. Drain, rinse and pat dry. Whisk vinegar, olive oil, sugar salt and pepper in a bowl. Add cabbage and toss well.
