large red onion, or several shallots
Tbsp olive oil
tomatoes, or more
Lots of fresh thyme
Salt and lots of pepper
Additional vegetables, such as zucchini and/or mushrooms, optional
In large pan, saute red onions and garlic in oil until onions are translucent. Add olives and capers. Add tomatoes, bay leaf, thyme, salt and pepper, and any additional vegetables. Let cook over medium heat until ingredients are well-blended, 20 or 30 minutes. Nestle the tuna steaks on top of the sauce, then cover them with a little more sauce. Continue cooking over medium heat for an additional 20-30 minutes until fish is cooked through.
