Caramel Brownie Cheesecake

Ingredients

  • 8 oz brownie mix
  • 1 egg
  • 1 T cold water
  • 14 oz pkg caramels
  • 5 oz can evaporated milk
  • 2-8 oz soft cream cheese
  • 1/2 c sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/4 c semi sweet chocolate chips

Preparation

Step 1

Preheat oven to 350 degrees.

Mix the brownie mix together with 1 egg and cold water until blended. Spread in 8 inch springform pan and bake for 25 minutes.

Melt caramels and milk over low heat stirring frequently until smooth. Reserve 1/3 c for topping. Pour remaining mixture over brownie.

Beat the cream cheese, sugar and vanilla on medium until well blended. Add 2 eggs, one at a time and whip until fluffy. Pour over caramel mixture.

Bake about 40 minutes. Cool on wire rack and refrigerate. Loosen from the pan. Heat reserved caramel mixture and spoon over the cheesecake. Melt chocolate and drizzle over the top.
