Ingredients
- 12 12 12 oz bacon
- 1 1 1 onion, diced
- 1 1 1 tsp garlic
- 2 2 2 T brown sugar (or coconut sugar)
- 1/2 1/2 1/2 cup brewed coffee
- 2 2 2 T balsamic vinegar
- 2 2 2 T maple syrup
- Black pepper (cayenne for extra heat?)
- Water, as needed
Preparation
Step 1
Dice and cook bacon in skillet until crisp; Drain most of the fat, but leave a couple of tablespoons in the pan. Add diced onion and garlic to skillet and cook on low slowly until translucent. Add the bacon back into the pan, along with next four ingredients.
Simmer for 2 hours, stirring and adding ¼ of water every 20 minutes or so, as needed.
When done, cool. If desired, you can put in food processor to make it smoother.
