APPLE & CHICKEN CROSTINI

Ingredients

  • 3 3 3 tblsp apple jelly, warmed
  • 1 1 1 tblsp fresh lemon juice
  • 2 2 2 tsp minced shallots
  • to to taste
  • 1 1 1 tblsp Dijon mustard
  • 1 1tblsp 1tblsp extra virgin olive oil
  • 8 8 8 bias-sliced baguette slices, toasted
  • 1 1/2 1 1/2 1/2 cups mesclun salad mix
  • 2 2 2 cups sliced cooked chicken
  • 1 1 1 Braeburn apple, thinly sliced
  • Chopped fresh chives

Preparation

Step 1

Whisk together jelly, lemon juice and shallots; season with salt. In a separate bowl, whisk together Dijon and oil.

Brush one side of each baguette slice with Dijon mixture, then top with mesclun, chicken and apple. Glaze each crostini with jelly mixture and garnish with chives.
