Steamed Lobster

Chef James from WRC adds a little white wine and aromatics when poaching lobster.

Ingredients

  • 1 1/2 1 1/2 1/2 lb. fresh live lobsters

Preparation

Step 1

Bring 2” water to a boil in a 16 qt. Stock pot over high. Add lobsters and cook until shells are bright red and you can distinctly smell cooked lobster in the ai, about 14-16 minutes.
