ROASTED FISH WITH ORANGE AND VEGETABLES (Jacques Robert)

Ingredients

  • Serving vegetables steamed or cooked in salted water:
  • • Olive oil
  • • 4 pieces of morue halibut about 5 oz each
  • • 2 oranges peeled and sliced
  • • Juice of one orange
  • • A few drops of lemon juice
  • • Extra virgin olive oil
  • • A few capers
  • • 1 shallot minced
  • • A few basis leaves minced
  • • Salt and pepper to taste
  • • Green beans
  • • Carrots
  • • Fenouil
  • • edamames (frozen)

Preparation

Step 1

1. Preheat oven at 400 °F.
2. Oil the fish and place and a cooking sheet with parchment paper.
3. Season the fish and put the pieces of oranges on top.
4. Sprinkle lightly with a few drops of orange juice and cook for about 8 minutes.
5. Mix remaining orange juice, lemon juice, olive oil, capers, shallot and season.
6. Pour this vinaigrette over cooked hot vegetables and mix well. Test the seasoning and add some juice if necessary.
7. Place the vegetables in the middle of the plate and place fish on top.
8. Pour a filet of olive oil and a few orange drops and garnish with basil leaves.
