Ingredients
- 4 4 4 med zucchini, cut into noodles using a spiralizer or similar tool
- 4 4 4 oz red cherry tomatoes, halved
- 4 4 4 oz gold cherry tomatoes, halved
- 8 8 8 oz small balls of Buffalo mozzarella, drained
- 1/2 1/2 1/2 c prepared pesto
- Fresh basil leaves, for garnish
Preparation
Step 1
Combine zucchini noodles, tomatoes and mozzarella in a large bowl. Add pesto and toss until coated. Garnish with fresh basil and serve, refrigerating any leftovers.
