Ingredients

  • Bonless chicken breast cubed
  • 8 8 potatoes cut into 1/2 cubes
  • 1/3 cup 1/3 cup olive oil
  • 1 teaspoon 1 teaspoon salt and pepper
  • 1 teaspoon 1 teaspoon paprika
  • 1 teaspoon 1 teaspoon garlic powder
  • Hot sauce to your taste
  • TOPPING
  • 1 cup 1 cup or more mexican taco blend shredded cheese
  • 1 cup 1 cup cooked bacon crumbled
  • 1 cup 1 cup green onion diced

Preparation

Step 1

Preheat oven 475 degrees spray 9x13 backing dish with cooking spray
Mix olive oil, salt, pepper, paprika, garlic powder and hot sauce
Add cubed potatoes to mixture stir to coat. Scoop potatoes into prepared baking dish leave behind as much olive oil mixture as possible
ADD cubed chicken to bowl with left over olive mixture to marinated

Bake potatoes 45-50 min stirring every 10-15 min until cooked through and crispy and browned outside.
Lower tempature to 400 degrees top potatoes with raw marinated chicken over potatoes. In a bowl mix cheese, bacon, and onion. Top over Chicken bake 15 min or until chicken is done
