LEMON CREAM CHEESE MUFFINS

Got this recipe from The Leader Post - May 2018 .. I was intrigued by the Cream Cheese in the batter...

Ingredients

  • 1 1/4 cups flour
  • 2/3 cup sugar
  • 2 tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup cream cheese
  • 1 large egg at room temp
  • 1/3 cup oil
  • 1/2 cup whole milk
  • 4 tbsp fresh lemon juice
  • 1 tbsp grated lemon rind

Preparation

Step 1

Oven at 375.

Combine flour, 2/3 cup sugar, powder and salt Mix in cream cheese using a pastry blender. Beat together the oil, egg, milk and 2 tbsp of lemon juice. Add lemon zest and liquid to batter and stir gently.

Put into muffin cups. Bake 20-25 minutes.

When still warm, pour 2 tbsp sugar and 2 tbsp lemon juice and brush over the top of the warm muffins with a pastry brush.
