Whole Wheat Blueberry Waffles

Ingredients

  • 3 egg whites or 1/2 cup fat-free cholesterol-free egg product
  • 1 cup Gold Medal whole wheat flour
  • 1 cup Gold Medal all-purpose flour
  • 2 cups buttermilk
  • 1 tablespoon sugar
  • 3 tablespoons vegetable oil
  • 2 teaspoons baking powder
  • 1 teaspoon grated orange peel
  • 1/4 teaspoon salt
  • 1 cup fresh or frozen (thawed and drained) blueberries

Preparation

Step 1

Heat waffle iron; grease if necessary. Beat egg whites in medium bowl
with hand beater until foamy. Beat in remaining ingredients except
blueberries just until smooth. Stir in blueberries.
Pour about 1/2 cup batter from cup or pitcher onto center of hot waffle
iron. (Waffle irons vary in size; check manufacturer's directions for
recommended amount of batter.) Close lid of waffle iron.
Bake about 5 minutes or until steaming stops. Carefully remove waffle.
Twelve 4-inch waffle squares
