French Strawberry Cake

Ingredients

  • 1/2 1/2 1/2 C (1 stick) unsalted butter, softened
  • 1 1/4 1 1/4 1/4 C sugar, divided
  • 2 2 2 lg eggs
  • 1/2 1/2 1/2 tsp vanilla extract
  • 2 2 2 C all-purpose flour
  • 1 1 1 Tbsp baking powder
  • 1/2 1/2 1/2 tsp salt
  • 1 1 1 lb strawberries, trimmed and quartered

Preparation

Step 1

Preheat oven to 350 deg. Coat a 10" round cake pan with nonstick spray. In the bowl of a stand mixer with the paddle attachment or using an electric hand mixer, beat butter and 1 cup sugar on medium speed until light and fluffy, about 5 minutes. Add the eggs 1 at a time, beating well after each. Stir in vanilla. Add the flour, baking powder and salt, and mix until smooth and well combined, scraping down sides of bowl to incorporate evenly. Use a rubber spatula to fold in the strawberries.

Pour into the prepared cake pan and use a spatula to spread evenly to the sides and smooth out the top. Sprinkle the remaining 1/4 cup sugar evenly over the cake. Bake 40 minutes or until a toothpick inserted in the center comes out clean.

Cool completely before removing from pan. Invert onto a plate, then flip back onto a cake stand or serving plate. Use a serrated knife to cut into 8 pieces. Store any leftovers in an airtight container.
