Ingredients

  • 14 14 14 oz prepared pizza dough
  • 2/3 2/3 2/3 c mayonnaise
  • 2 2 2 Tbsp ketchup
  • 1 1 1 Tbsp fresh lime or lemon juice
  • 2 2 2 tsp hot sauce
  • Kosher salt
  • 3 3 3/4 oz coarsely grated Gruyere cheese (about 3/4 cup)
  • 1 1 to cup sauerkraut, rinsed in a strainer and pressed to remove excess moisture
  • 8 8 1/2" oz thinly sliced corned beef, cut crosswise into 1/2" thick strips
  • 1/2 1/2 1/2 c thinly sliced dill pickle

Step 1

In a bowl whisk together the mayonnaise, ketchup, lime juice, hot sauce and salt to taste; set aside.

Divide the dough into 4 balls; working with 2 balls, roll out each ball into a round 8" wide and 1/8" thick. Transfer the rounds to a baking sheet.

Sprinkle one-fourth of the cheese evenly onto each round, spreading it to 1/4" of the edge and top with 1/4 of the sauerkraut, followed by 1/4 of the corned beef and pickle slices.

Bake the pizzas on the bottom rack of the oven for 7 to 8 minutes until the crust is golden and crisp on the bottom. Drizzle the slices with some of the mayonnaise dressing.
