Glorious Gazpacho

I am not normally a cold soup lover. However, I do make an exception in this instance. Since I fancy tomatoes, this soup is definitely to my liking. If you like tomatoes then you will also like it.

Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 3 cups tomato juice
  • 1 cup beef broth
  • 1/4 cup onion, minced
  • 1 tomato, cubed
  • 1 cup celery, minced
  • 1/4 teaspoon Tabasco pepper sauce
  • 1 teaspoon salt
  • 1/8 teaspoon pepper, freshly ground
  • 1 bell pepper, minced
  • 1 cucumber, diced

Preparation

Step 1

Beat together the oil and lemon juice.
1. Stir in the tomato juice, broth, onion, tomato, celery, Tabasco, salt, and pepper.
2. Chill 3 hours.
3. Serve bell peppers, and cucumbers as garnishes.
4. Keeps several weeks in refrigerator.
