4th of July Potato Salad

Ingredients

  • 5 5 5 lbs. red potatoes, chopped
  • 3 3 3 c. mayonnaise
  • 2 2 2 c. finely chopped pickles
  • 5 5 5 boiled eggs, chopped
  • 1/2 1/2 1/2 c. celery, chopped
  • 1/2 1/2 1/2 c. onion, chopped
  • 3 3 3 tbsp. mustard
  • 1 1 1 tbsp. apple cider vinegar
  • 1 1 1 tsp. salt
  • 1/2 1/2 1/2 tsp. ground black pepper

Preparation

Step 1

In large pot cover chopped potatoes with salted water and bring to a boil. Reduce heat to medium-low and simmer for about 10 min. or until just tender. Drain and rinse potatoes and let cool completely.

Combine mayo, pickles, eggs, onion, celery, mustard, vinegar, salt and pepper. Fold until completely mixed.
