Barley & Chicken Jambalya

Ingredients

  • 3/4 3/4 3/4 tsp pepper
  • 1 1 1 tbsp. paprika
  • 2 2 2 tsp onion powder
  • 1 1 1 tsp oregano
  • 1/8 1/8 1/8 tsp cayenne
  • 1 1 1 tbsp. olive oil divided
  • 1 1 1 lb chicken thighs
  • 1 1 1 cup barley
  • 1 1 1 onion chopped
  • 1 1 1 green pepper chopped
  • 2 2 2 stalks celery chopped
  • 1 1 1 tbsp. garlic
  • 1/2 1/2 1/2 lb sausage sliced
  • 1 1/2 1 1/2 1/2 cups diced tomatoes
  • 1 1/2 1 1/2 1/2 cup water
  • 2 2 2 tbsp. thyme
  • 1/2 1/2 1/2 lb shrimp

Preparation

Step 1

1. In a small bowl mix together spices and set aside
2. Heat half the olive oil in a saucepan. Season chicken with mixed spices and sear in saucepan until brown, about 5 mins. Transfer to plate
3. Add barley to pan and swirl in juices and oil. Transfer to instapot.
4. Add remaining oil and saute onion, pepper, cerery and garlic. Cook until softened and brown.
5. Add to Instapot and add tomatores, sausage and water.
6. Set timer for 6 mins. Remove lid & steam
7. Add shrimp and cook for 3 more mins.
