Ingredients
- 4 to 4 1/2 cups - Enriched Flour*
- 2 packages - Dry Yeast
- 1/2 Cups - Water
- 1/2 Cups - Sugar
- 1/2 tsp. - Salt
- 2 - Eggs
- 1/2 cup mashed potatoes (prepared instant may be used)
- 1/2 cup - brown sugar
- 2 tsp. - cinnamon
- 1/2 cup - Butter. melted
- Confectioners' sugar icing
Preparation
Step 1
Stir together 2 cups of flour and yeast. Heat water, sugar, butter and salt over low heat only until warm, stirring to blend. Add liquid ingredients to flour-yeast mixture and beat until smooth, about 2 minutes on medium speed of electric mixer or 300 strokes by hand. Blend in eggs and mashed potatoes . Add 1 cup flour and beat 1 minute on medium speed or 150 strokes by hand. Stir in more flour to make moderately stiff dough.
Turn onto lightly floured surface and knead until smooth and satiny, about 8-10 minutes. Shape into ball and place in lightly greased bowl, turning to grease all sides. Cover and let rise in warm place (80°-85°) until doubled, about 1-1/2 hours. Punch down. Divide in half. Let rest 10 minutes. Pat or roll each portion into 9-inch square; fit into greased 9-inch square pan. Mix together brown sugar and cinn. Sprinkle half the sugar cinn. mixture over each coffee cake. Drizle cakes with remaining 1/2 cup butter. Let rise in warm place until doubled, about 1 hour. Bake in preheated 350° oven 30-35 min. Remove from pan. Drizzle with confectioners' sugar icing while warm, if desired.
