Ingredients
- Baby Potatoes (1 1/4 lbs)
- 3 tbsp unsalted butter, melted
- 1 tbsp olive oil
- salt and pepper
- Finely chopped herbs, cheese
Preparation
Step 1
Boil potatoes till soft.
Place on a cookie sheet on parchment paper.
Let sit for 5 minutes after draining.
Smash down - with potato masher or large fork.
Drizzle with butter and 1/4 tsp of oil on each potato.
Bake at 350 for 40 minutes (I finished these with the convection oven to crisp them up)
The last 10 minutes I added some shredded cheddar and herbs.
