Grilled Chipotle Pork Tenderloin

Ingredients
- 2 pounds lean pork tenderloin(s)
- 1 chipotle pepper, rehydrated, seeded and chopped
- 1/2 tablespoon olive oil
- 3 tablespoons balsamic vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 clove garlic, pressed
Preparation
Step 1
Using a sharp knife, remove and discard any whitish, silver skin and visible fat from the tenderloin(s). In a shallow bowl, combine remaining ingredients (this can be done in advance and stored in the refrigerator for 2 to 3 days). Add the trimmed tenderloin(s) and marinate at room temperature. Preheat indoor or outdoor grill to HIGH. Sear pork tenderloin(s) on all sides then lower heat to medium and grill for 8 to 12 minutes or just until pork is cooked through; transfer to a platter and let it (them) rest for 2 to 3 minutes before slicing.
SERVING SUGGESTION: Steamed green beans and baked sweet potatoes (nuke in microwave to keep your kitchen cool).
GLUTEN FREE: Make sure vinegar is gluten free.
