  • 1 1 1 cup mashed banana
  • 1/4 1/4 1/4 cup butter melted
  • 2 2 2 eggs
  • 1 1 1 cup milk
  • 2 2 2 teaspoons coconut extract
  • 2 2 2 cups flour
  • 1/2 1/2 1/2 cup sugar
  • 2 2 2 teaspoons baking powder
  • 1 1 1 teaspoon salt
  • 1/4 1/4 1/4 cup shredded coconut
  • Glaze
  • 1/2 1/2 1/2 cup mashed banana
  • 1-1/2 1-1/2 1-1/2 cups powdered sugar
  • 1 1 1 teaspoon coconut extract
  • 1/4 1/4 1/4 cup milk
  • 2 2 to cups shredded coconut to garnish

Donuts

Preheat oven to 350 degrees.

In a large bowl, whisk together banana, butter, eggs, milk and coconut extract.

Add flour, sugar, baking powder, salt and shredded coconut and stir until just combined.

Add batter to piping bag - or plastic storage bag with corner snipped to act as a piping bag - and fill wells of a greased donut pan just to top.

Bake for 12-15 minutes or until just beginning to turn golden. Allow to cool 3-5 minutes in pan before cooling completely on wire rack.
