Ingredients

  • Mix together:
  • 1 cup butter crisco
  • 1 cup granulated sugar
  • Add and mix:
  • 1 cup pumpkin puree (like libby's)
  • 1 egg
  • 1 teaspoon vanilla
  • Add and mix just until combined:
  • 2 1/4 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • Frosting:
  • 3 T. Butter
  • 4 T. Milk
  • 1/2 C. Brown Sugar
  • 1 C. Powdered Sugar

Preparation

Step 1

On a cookie sheet sprayed with pam, drop tablespoon sized dollops of cookie dough about 2-3 inches apart. Dough will be tacky. Use your finger to shape and slightly press each dollop a little bit flatter and round. Bake at 350 degrees for 10-12 minutes. Once cookies have cooled, make your frosting:

In a saucepan, over medium heat melt 3 tablespoons of butter, 4 tablespoons of milk and 1/2 cup brown sugar together. Stir constantly once it begins to boil. Stir for 1-2 minutes. Make sure the mixture doesn't burn. Take the pan off the heat and let it cool slightly. About 15 minutes. Add and mix thoroughly 1 cup powdered sugar. Frost each cookie with a little dollop of the icing and eat them up. Makes roughly 35-40 3 inch cookies.
