Ingredients
- 1/3 cup butter
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 3 cups cooked rice
- 1 tbsp grated lemon rind
- 1/2 tsp salt
- 1/2 tsp thyme or 1 1/2 tbsp fresh dill
- 1/4 tsp freshly ground pepper
- 1/4 cup lemon juice
Preparation
Step 1
Melt butter in frying pan, saute onion and celery until tender. Add mixture plus rest of ingredients to rice and stir well. Can be frozen.
