Quinoa Salad with Apples

Ingredients
- DRESSING:
- 1cup1 cup quinoa
- 22 vegetable broth
- 22 apples, diced
- 1/2cup1/2 cup toasted pecans, roughly chopped
- 1/2cup1/2 cup dried cranberries(orangle flavored if available)
- 2cups2 cups pea pods and brocolli or fresh spinach
- 1/4cup1/4 cup olive oil
- 2tablespoons2 tablespoons balsamic vinegar (your choice)
- 1tablespoon1 tablespoon maple syrup

Directions
1.Bring vegetable broth to a boil in a small pot. Add quinoa, lower to a simmer and cover. Cook for 15-20 minutes, checking periodically, until broth is absorbed and quinoa has cooked.
2.While quinoa is cooking, prepare the other ingredients.
3.Chop the apples, pecans, and vegetables
4.Make the dressing by combining all ingredients in a bowl and whisking to mix.
5.Once quinoa is finished cooking, combine quinoa with apples, pecans, cranberries, and vegetables.
6.Toss with dressing.
