Rolo Cookies

Ingredients

  • 2 sticks butter
  • 1 c. sugar
  • 1 c. brown sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 3/4 c. cocoa
  • 1 tsp. baking soda
  • 2 1/2 - 3 c. flour
  • 40 - 50 unwrapped Rolo candies

Preparation

Step 1

Cream butter. Add sugars and mix well. Add eggs. Mix well. Add vanilla, soda and cocoa. Mix well. Add enough flour to make a stiff, but not dry dough. It won't roll if it is too sticky or too dry. Using a small scoop, or a small walnut size chunk of dough, push in one candy. Wrap dough around and roll into a ball. Place on ungreased cookie sheet about 2 inches apart. You can fit 2 dozen cookies on a standard jelly roll pan. Bake 350 degrees for 7-9 minutes. Don't overcook. Let sit on the pan for a couple minutes before removing to a wire rack.
