Pork Tenderloin with Soy, Ginger and Cilantro

Ingredients

  • 1/4 1/4 1/4 cup soy sauce
  • 1/4 1/4 1/4 cup olive oil
  • 2 2 2 tbsp. honey
  • 2 zest and juic3e of 2 limes
  • 2 2 2 tbsp. finely grated peeled fresh ginger
  • 1 1 1 garlic clove, minced
  • 2 2 1-inch (1-pound) pork tenderloins, cut into 1-inch cubes
  • Kosher salt and freshly ground black pepper
  • 1/4 1/4 1/4 cup roughly chopped fresh cilantro leaves

Preparation

Step 1

1. Preheat a grill or grill pan to medium-high heat.

2. In a medium bowl, whisk together the soy sauce, lime zest and juice, ginger and garlic. Season the pork with salt and pepper. Toss the pork in the marinade before threading 6 pieces of pork onto each of 6 skewers.

3. Put the skewers on the grill, cover and cook until the meat is well caramelized, about 2 minutes per side.

4. Remove the skewers from the grill and put them on a platter. Top with the chopped cilantro and serve immediately.
