Ground Beef Chili

Ingredients

  • 1 1 1 tbsp. vegetable oil
  • 2 2 2 pounds lean ground beef
  • 1 1 1 cup onion, chopped large
  • 1 1 1 tbsp. minced garlic
  • 1 1 1 can diced tomatoes, with liquid (14-16 ounces)
  • 2 2 2 tsp. chicken base mixed into 2 cups of water
  • 1 1 1 can mild green chile peppers, with liquid (4 ounces)
  • 1 1 1 tsp. sugar
  • 1/2 1/2 1/2 tsp. cumin
  • 2 2 2 tsp. chili powder
  • 2 2 2 tbsp. cornmeal
  • to and pepper to taste
  • shredded cheddar cheese, for garnish

Preparation

Step 1

1. Add the vegetable oil to the pressure cooker and heat on high or "brown" with the lid off until sizzling. Add the ground beef, breaking it up with spoon or spatula as it browns.

2. Once the ground beef is browning well, add the chopped onion and minced garlic and stir in for 2 minutes.

3. Add the remaining ingredients, except for cheddar cheese, and stir. Securely lock on the pressure cooker's lid, set the cooker to high and cook for 8 minutes.

4. Let the pressure cooker release naturally for 10 minutes before quick releasing the remaining pressure and safely removing lid. Salt and pepper to taste and serve topped with shredded cheddar cheese.
