ITALIAN SAUSAGE MINESTRONE

Ingredients

  • 1 pound mild italian sausage
  • 2 large carrots - chopped
  • 2 celery ribs - chopped
  • 1 medium onion - chopped
  • 6 garlic cloves, minced
  • 3 tbsp olive oil
  • 7 cups chicken broth
  • 2 can white kidney beans
  • 2 cans - 14 oz - fire roasted tomatoes
  • 2 bay leaves
  • 1 tbsp Italian SEasoning
  • 1 tbsp tomato paste
  • 1 cup small pasta

Preparation

Step 1

Brown sausage(after removing from casing) till fully cooked. Remove from heat.

Saute carrots, celery and onion in olive oil about 5 minutes till tender. Add remaining ingredients (except pasta) and cook 30 minutes. Add pasta and cook 8-10 minutes.

If freezing, do not add pasta. Freeze and then cook pasta when reheating.
