Homemade Pico De Gallo

Ingredients

  • 2 whole Cucumbers
  • 2 whole Yellow Or Spanish Onions
  • 1 whole Tomato
  • 1 whole Fresh Jalapeno Pepper
  • 1 bunch Fresh Cilantro
  • 1 whole Lime
  • 2 Tablespoons Sea Salt
  • 2 Tablespoons Fresh Ground Pepper

1. Mince the cucumbers, onions, tomatoes and jalapenos into tiny bite size pieces.

2. Mix everything evenly into a bowl.

3. Allow the mixture to sit for 2 minutes to allow the juices to be released from the vegetables.

4. Coarsely chop the cilantro and mix into the pico de gallo.

5. Squeeze lime juice into the mix and allow it to sit for 2 minutes for the juices to be released even further.

6. Finally, mix in sea salt and fresh ground pepper and serve in bowls.

This dish can either be served as a side dish for a authentic Mexican feast or as a side salad. It can also be used as a light and refreshing snack in the evening. This is the perfect dish to fight the heat in summer.
