Ingredients
- Salad:
- 2 2 2 cups (350g) cherry or grape tomatoes, halved
- 1 1 1 english cucumber, halved and thinly sliced
- 1-2 1-2 1-2 ripe large avocados, quartered and chopped
- 1/4 1/4 1/4 of a small red onion, thinly sliced
- 3 3 3 tablespoons chopped cilantro
- Dressing:
- 2 2 2 tablespoons extra virgin olive oil
- 1 1 1 tablespoon white wine or red wine vinegar
- 1 of 1 lime
- to and pepper to taste
Preparation
Step 1
Combine all salad ingredients in a large bowl, set aside.
In a small bowl combine the ingredients for the dressing. Drizzle over salad and lightly toss. Serve immediately.
Recipe Notes
You can substitute the english cucumber for a regular one. Just be sure to peel it and if the seeds are large remove them.
You can substitute the grape or cherry tomatoes with 1 pound of Roma tomatoes, chopped.
Optional add-ins to customize your salad:
Add 1/2 of a bell pepper, chopped. The salad in these pictures has a red bell pepper added.
3-4 ounces of feta cheese or 1 cup cubed mozzarella.
2 cups cooked quinoa
Fresh corn, or even slightly charred corn.
1 (14.5 oz) can chickpeas, drained.
Instead of cilantro try parsley, basil, or even dill.
Change out the white wine vinegar for red wine vinegar or balsamic vinegar.
