Ingredients
- FOR THE NOODLES:
- 8 oz. rice vermicelli noodles (about 6 bundles)
- 1 bunch spinach, rinsed, drained and trimmed
- 2 teaspoons olive oil
- 1 large egg, separated and beaten
- 1 1/2 cups onion, thinly sliced
- 8 oz. mushrooms, thinly sliced
- 7 scallions, cut into 2 inch pieces
- 1/2 green bell peppers, cut into thin strips
- 1/2 red bell pepper, cut into thin strips
- 1 1/2 large carrots, cut into matchsticks
- S&P to taste
- FOR THE SAUCE:
- 1 tablespoon sesame oil
- 2 tablespoons light soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon brown sugar

Preparation
Step 1
1. Whisk together sauce ingredients and set aside.
2. Soak noodles in hot water 10 minutes and drain. Cook noodles in a 4 quart pot of boiling water, uncovered, 1 minute. Drain and rinse under cold water until cool. Drain well and pat dry.
3. Put Spinach in boiling salted water. Cover and immediately remove from heat. Let sit 30 seconds. Drain and rinse under cold running water. Squeeze into a large ball to remove excess water. Spinach should be fairly dry. Chop into 4 thick chunks. Set aside.
4. Heat 1 t. oil in an 8 inch nonstick skillet over medium heat. Tilt pan so oil covers bottom. Pour egg white on one side of the skillet as for an omelet. Cook one minute without stirring. Remove from heat, cover and let set for 1 minute. Egg should be cooked throughout. Transfer to a cutting board and cut into thin strips. Repeat with the yolk. Set aside.
5. Place a large bowl near the stove. Coat bottom of a 12 inch skillet or large Wok with 1 t. oil over medium-high heat. Stir fry each vegetable separately (peppers may be combined) until just soft, adding 1 t. oil as needed. Combine and serve.
