Loaded Baked Potato Salad

Ingredients

  • 5 lbs small unpeeled red potatoes
  • 1 tsp salt
  • ½ tsp pepper
  • 8 hard boiled eggs, chopped
  • 1 lb sliced bacon cooled and crumbled
  • 2 cups shredded cheddar cheese
  • 1 medium Vidalia onion
  • 3 dill pickles chopped
  • 1 ½ cup (12oz) sour cream
  • 1 cup mayonnaise
  • 2-3 tsp prepared mustard

Preparation

Step 1

Place potatoes on a greased cookie sheet.
Bake uncovered @ 425¬¬0 ¬for 40-45 min until tender
Cool in pan
In a large bowl, combine the potatoes, eggs, bacon, cheese, onion
& pickles. In a small bowl combine sour cream, mayo, and mustard.
Pour over the potato mixture and toss to coat.
Serve immediately
