Ingredients

  • 1 1 1 pound asparagus, woody stems snapped off
  • 4 4 4 slices bacon
  • 1/4 1/4 1/4 cup bacon fat (add olive oil if you don’t have enough fat)
  • 1 1 1 shallot clove, grated
  • 1 1 1 tablespoon cider vinegar
  • 2 2 2 teaspoons Dijon mustard
  • 2 2 2 teaspoons honey
  • 1/4 1/4 1/4 teaspoon crushed red pepper
  • Salt if needed

Preparation

Step 1

Steam asparagus until just bright green and crisp-tender. It will cook a little more with the dressing. Drop into ice water while you make the dressing.

Cook bacon until crisp and set aside on a paper-towel-lined plate. When cool, roughly chop. Measure bacon fat and add olive oil, if needed, to make ¼ cup. Heat in a skillet over medium heat and add grated shallot. Cook less than a minute until just beginning to sizzle. Turn off heat. Whisk in cider vinegar, mustard, honey and crushed red pepper.

Turn heat to medium-low and add asparagus and chopped bacon. Toss until heated through, then add a sprinkle of salt if needed
