Ingredients
- 1 1 2” lb yukon gold potatoes, peeled and cut into 2” pieces
- salt & pepper
- 2 2 2 T unsalted butter
- 2 2 2 T olive oil
- 1 1 1 large onion chopped
- 2 2 1/4” med carrots peeled and cut into 1/4” pieces
- 1 1/4 1 1/4 1/4 lbs ground beef
- 3 3 3 T tomato paste
- 1/4 1/4 1/4 t cinnamon
- 1/2 1/2 1/2 C beer, stout or lager
- 1/2 1/2 1/2 t beef bouillon
- 1/2 1/2 1/2 C parsley
Preparation
Step 1
Boil potatoes in med saucepan, add 2 t salt and boil until tender. Reserving 1/2 C cooking liquid, drain potatoes and return to pot.
Mash with butter, adding liquid until smooth. While potatoes are cooking, add oil and onions to 10” cast iron skillet, and cook covered on medium for 3 minutes.
add carrots and cook covered until just tender. add beef and break up into small pieces, until no longer pink.
Turn on broiler. spread mashed potatoes over beef, top with thyme if desired. broil until golden brown.
