Steak Fingers with Mustard Cream Sauce

Ingredients

  • 2 large eggs
  • 1 sleeve saltine crackers, finely crushed (Nabisco Premium)
  • 1/3 C flour
  • 4 tsp Cajun seasoning, divided
  • 1 1/2 LBS top sirloin steak
  • 1/2 C spicy brown mustard
  • 1/2 C sour cream
  • vegie oil

Preparation

Step 1

in shallow bowl, beat eggs
in med bowl, combine cracker crumbs, flour & 3 tsp.
Cajun seasoning

cut steak in half lengthwise
cut halves diagonally across grain into 1/2 " thick strips

dip steak strips into egg mixture
dredge in cracker mixture
cover & chill 1 hr

in med bowl, stir together mustard, sour cream & remaining 1 tsp Cajun seasoning
cover & chill until ready to serve

in lg. skillet, pour oil to depth of 4"
heat to 375
fry steak strips in batches for 5-7 min or until golden

serve w/ mustard cream sauce
