Sweet Potato Casserole

- 6 Sweet potatoes
- 4 bananas, unpeeled
- 1 cup unsalted butter
- 1/4 cup honey
- salt
- 1/2 cup flour
- 3/4 cup dark brown sugar
- 1 1/2 cups pecans, chopped

Step 1
Preheat oven 375 degrees F.
Prick sweet potatoes with fork, put them in a roastin pan and roast for 30 minutes. Toss the bananas into the pan & continue roasting for 15 minutes, until both bananas & potatoes are very soft. Remove from oven.
When potatoes are cool enough to handle, scoop out the flesh into a large mixing bowl. Peel bananas & add them to the bowl along with 1 stick butter, & the honey. Season with salt & beat until fluffy. Spoon into an oven-proof serving bowl and smooth the top.
In a seperate mixing bowl, use your fingers to rub together 1 stick of butter, brown sugar, flour, & pecans until the mixture is the consistency of coarse crubs. Sprinkle the crumb mixture over the sweet potatoes and return to the oven.
Cook for 30 minutes until the crumbs are golden. Serve hot
