Bulgar Pilaf w/Tomatoes

Add cooked chick peas for added substance. Serve w/green veggie such a green beans or sauteed spinach.

Ingredients
- 2 tbsp olive oil
- 3 shallots, finely chopped
- 1 cup medium bulgur
- 2 cups veg stock
- salt/pepper
- 1 cup finely diced fresh or canned tomatoes
- 1 tbsp chopped fresh mint
Preparation
Step 1
1. Heat olive oil in large skillet over medium heat. Add the shallots, cover and cook until softened, about 3 minutes. Add the bulgur and stir to combine. Stir in the stock and bring to a boil. reduce the heat to low and season with salt and pepper to taste. Cover and simmer until the bulgur is tender and the liquid is absorbed, about 15 minutes.
2. Remove from heat and stir in tomatoes. Cover and let stand 5 minutes. Stir in mint, cover and let stand for 5 minutes more before serving.
