Ingredients
- 2 2 2 T olive oil
- 1 1 1 onion, chopped
- 2 2 2 t curry powder
- 1 1/2 1 1/2 1/2 T fresh ginger, grated
- 3 3 3 medium tomatoes, chopped
- 1 1 1 T powdered milk
- 5 5 5 cups of kale or spinach, thinly cut
- to to taste
Preparation
Step 1
In a large pan, sauté onion in oil. Add curry powder and ginger; cook for 2 minutes. Add tomatoes. Simmer for 2 minutes, then add powdered milk. Stir in the greens, cover and simmer for 5 minutes. Serve with rice.
