  • 2 2 2 tbsp olive oil, divided
  • 12 12 12 oz fresh chorizo
  • 1 1 1 poblano, sliced
  • 1 1 1 red bell pepper, sliced
  • 2 2 2 scallions, sliced
  • to and pepper to taste
  • 1/4 1/4 1/4 cup salsa
  • 1/4 1/4 1/4 cup water
  • 6 6 6 tostados
  • 6 6 6 eggs
  • sliced scallions for garnish

Preparation

Step 1

1. heat 1 tbsp olive oil in a large skillet over medium high heat. add chorizo and cook, stirring, until browned, about 5 minutes. push to one side of the skillet.
2. add 1 tbsp olive oil, the sliced peppers and scallions to the skillet; season with salt and pepper. cook until tender, 5 minutes. add the salsa and water; stir everything together.
3. divide the chorizo mixture among 6 tostados; top each with a fried egg and more scallions.
