Orange-Scented Waffles with Blueberry Compote

Ingredients

  • Blueberry Compote:
  • 1 tbsp unsalted butter
  • 3 pints blueberries (1 bag frozen blueberries thawed, use juice)
  • 1/2 cup sugar
  • 1/4 cup fresh orange juice
  • 1/3 cup orange liqueur
  • Easy Blend flour to thicken
  • Orange-Scented Waffles:
  • 2 cups flour
  • 1/4 tsp baking soda
  • Pinch salt
  • 1 tbsp sugar
  • 1 tbsp orange juice concentrate
  • 1 3/4 cups milk
  • 1/4 cup club soda
  • 4 large eggs, separated
  • 1/4 cup unsalted butter, melted
  • Zest of 1 orange

Step 1

For the compote, heat butter in a large saute pan until it starts to bubble. Add blueberries and saute for 2 minutes just to soften the berries. Add sugar, orange juice, and liqueur and bring the mixture to a boil. Reduce heat to medium low and simmer for 5 minutes, just until the mixture is thick and syrupy. Keep warm while you make the waffles.

For the waffles, heat a waffle iron. Place flour, baking soda, salt, and sugar in a medium-size bowl and mix well. In another bowl, mix together orange juice concentrate, milk, club soda, egg yolks, butter, and orange zest. Pour egg mixture into the flour mixture and stir just until batter comes together.

Using an electric mixer, beat egg whites just until soft peaks form. Fold egg whites into batter, using large gestures. Spoon some of the batter into a hot well greased waffle iron. Cook until the waffle is golden brown. Repeat with remaining batter. Serve warm with blueberry compote. If you really want to be decadent top with whipped cream.
