Ingredients
- 2 slightly beaten eggs
- 1 clove garlic, minced
- 3/4 C soft bread crumbs ( 1 slice)
- 1/2 C tomato juice
- 2 T snipped parsley
- 1/2 t dried oregano, crushed
- 1/4 t salt
- 1/4 t pepper
- 1 clove garlic, minced
- 2 lbs ground beef (90% lean)
- 1/2 C shredded mozzarella cheese (6oz)
- 3 slices (4x4 " each) mozzarella cheese, halved diagonally

Preparation
Step 1
In a large mixing bowl combine the eggs, bread crumbs, tomato juice, parsley, oregano, salt, pepper, & garlic. Add the ground beef & mix well. On foil, pat meat mixture to a 12x10" rectangle. Sprinkle shredded mozzarella cheese over. Starting from a short side, carefully roll up meat, jelly-roll style, using foil to lift; seal edges. Place roll, seam side, in a 13x9x2" baking pan. Bake in a 350* oven for
1- 1/4 hours or until an instant read thermometer registers 170* & juices run clear. Place mozzarella cheese wedges over top of roll; return to oven about 5 mins or until cheese melts.
