Pulled Chicken Tacos

Ingredients

  • 2 2 2 T Olive Oil
  • 1 1/2 1 1/2 1/2 lb. boneless skinless chicken breasts
  • 1/2 1/2 1/2 tsp. Kosher salt
  • 1/2 1/2 1/2 tsp. black pepper
  • 1/4 1/4 1 cup chopped white onion from 1 small onion
  • 14.5 14.5 can 14.5 oz. can diced tomatoes, untrained
  • 1 1 1 T chili powder
  • 1 1 1 tsp ground cumin
  • 1 1 1 tsp dried oregano
  • 1/2 1/2 1/2 tsp.granulated sugar
  • 2 2 2 tsp.red wine vinegar
  • 2 2 2 garlic cloves, minced
  • 1/4 1/4 2 c lime juice from 2 limes
  • 8-12 8-12 8-12 soft tortillas

Preparation

Step 1

1. Heat oil in large skillet. Season chicken with salt and pepper, and cook in skillet until golden, 3 minutes on each side.
2. Add onion and cook until slightly translucent, about 2 min
3. Stir in tomatoes, spices, vinegar and garlic.
4. Reduce heat to medium low and simmer, uncover until chicken is cooked through, about 15 minutes
5. Transfer chicken to cutting board and shred with two forks.
6. Return chicken back to skillet, add lime juice and bring to simmer over medium heat, cook until chicken has absorbed most of the liquid 5 to 8 minutes.
7. Warm the tortillas and divide filling among tortillas.
8. Serve with taco toppings of choice.
