Shrimp and Carrot Stir Fry with Scallion Pancakes

Ingredients
- 2-3 2-3 2-3 Trader Joes frozen scallion pancakes
- 1/2 1/2 1/2 cup Fresh Mint torn into smaller pieces
- 1 1 1 Lime
- 1 1 1 cup shredded carrots
- 10 10 10 Oz. Shrimp
- 1 1 1 T. oil
- salt and pepper
Preparation
Step 1
Heat scallion pancakes in ungreased frying pan until hot and store on plate in oven. Reheat skillet with 1 T. oil on high heat. Slice lime in half. Cut one half into wedges for garnish. Save other half to juice. Add carrots to skillet and cook for 1 minute. Add shrimp and cook for 2 more minutes or until pink. Remove pan from heat. Add mint and juice from remaining lime half. Season with salt and pepper. Top pancakes evenly with shrimp and carrots and serve with soy sauce or hot sauce.
