"Chicken Broccoli Stir Fry

Chicken Broccoli Stir Fry with Shiitake mushrooms comes together in 30 minutes and makes for an easy low fuss weeknight healthy dinner. Gluten Free and Dairy Free too!

Ingredients

  • 3 3 3 tablespoons Armour Premiun All-Natural Lard divided
  • 1 1 1 tablespoon garlic minced
  • 2 2 2 tablespoons ginger minced
  • 8 8 8 ounces shiitake mushrooms caps, removed and thinly sliced
  • 1.6 1.6 1.6 pounds chicken breast cubed, (or skin less bonesless chicken thighs)
  • 16 16 16 ounces broccoli florets cut up
  • 1/4 1/4 1/4 cup tamari
  • 1/4 1/4 1/4 cup honey
  • 1 1 1 tablespoon sesame oil
  • 1 1 1 tablespoon rice vineger
  • 1 1 1 tablespoon chili garlic sauce
  • 1.5 1.5 to cups rice cooked according to package directions

Instructions
Heat 2 tablespoons Armour Premiun All-Natural Lard in a large wok over medium high heat. Add garlic and ginger. Stir fry for 1-2 minutes until fragrant.

Add shiitake mushrooms and cook until mushrooms are lightly browned on each side.

Remove mushrooms and ginger garlic mixture from the wok.

Add remaining 1 tablespoons Armour Premiun All-Natural Lard to the wok.

Add chicken. Cook until browned and cooked through.

Add broccoli florets and stir for a few minutes. Add shiitake and ginger garlic mixture back to the wok.

In a small bowl combine the sauce ingredients, honey, tamari, chili garlic sauce, sesame oil and rice vinegar. Mix until smooth. Add sauce to the wok and mix. Cook for 1-2 minutes until sauce has coated everything in the wok.

Serve over rice.
