Ingredients

- 1 cup (2 sticks) butter, softened
- 1 cup white sugar ¼ cup brown sugar, firmly packed
- 1 large egg
- 2 teaspoons vanilla extract
- 1 cup canned pumpkin puree
- 2 cups all-purpose flour
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon baking soda ¾ teaspoon salt
- 2 cups white chocolate chips

Preheat oven to 350 degrees. Line bottom and sides of a 9-by-13-inch baking pan with foil, leaving an overhang on all sides. Spray with cooking spray.
Combine the butter, both sugars, egg and vanilla until well blended. Mix in the pumpkin puree. Sift together the flour, cinnamon, nutmeg, baking soda and salt. Add the flour mixture to the pumpkin mixture. Stir in the white chocolate. Spread batter evenly in prepared pan. Bake for about 35 to 40 minutes, or until the edges begin to pull away from the sides of the pan. Do not over-bake. Cool, then, holding on to the foil, lift the cake from the pan. Cut into squares.
