Mae Regan's Lemon Bread

Ingredients

  • Glaze:
  • 6 Tbsp margarine
  • 1 cup sugar
  • 1 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 cup milk
  • finely grated rind of 1 lemon
  • 1/2 cup walnuts, ground fine (optional)
  • 1/3 cup confectioners' sugar
  • Juice from 1 lemon

Preparation

Step 1

Cream margarine, sugar, and eggs together. Add dry ingredients, alternating with milk and lemon rind. Add walnuts, if using. Put batter in a lightly greased loaf pan and bake in preheated 325° oven for about 45 minutes.
Remove loaf from oven and prick top with toothpick. Mix confectioners' sugar with lemon juice and pour over top of bread while still warm. Makes 1 loaf.
