  • Ingredients
  • 1 1 1 cup all-purpose Flour
  • 1-1/4 1-1/4 3/4 1/2 Sugar (divided into 3/4 and 1/2 cups)
  • 1 1 1 teaspoon Baking Powder
  • 1/4 1/4 1/4 teaspoon Salt
  • 1/2 1/2 1/2 teaspoon ground Cinnamon
  • 1/4 1/4 1/4 teaspoon ground Nutmeg
  • 2 2 2 Eggs
  • 1/4 1/4 1/4 cup Milk
  • 1/4 1/4 1/4 cup Vegetable oil
  • 3 3 3 (6oz) punnets of Blackberries (or your favorite Berries)
  • 1/2 1/2 1/2 cup Water
  • Heavy or whipped cream or vanilla ice cream for topping, optional

Preparation

Step 1

In the slow cooker, whisk together the flour, 3/4 cup sugar, baking powder, salt, cinnamon and nutmeg.
Combine the eggs, milk and oil in a bowl then stir into the dry ingredients just until moistened.
In a large saucepan, combine the berries, water, and remaining sugar. Bring to a boil.
Once it has boiled, remove from the heat and immediately, pour over batter. Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into the batter comes out clean.
Turn the slow cooker off. Uncover and let stand for 30 minutes before serving. Top with vanilla ice cream or whipped cream!
Yield: 6-8 Servings
