Apricot Vinaigrette

  • 1/4 cup apricot preserves
  • 1/4 cup orange juice
  • 2 tablespoons white wine vinegar
  • 1 tablespoon sugar
  • 2 teaspoons grated gingerroot
  • 1/8 teaspoon crushed red pepper flakes
  • 1/8 teaspoon salt
  • Olive Oil

Preparation

Step 1

In a food processor or blender, process the first 7 ingredients (apricot preserves through salt) until smooth. Stream in olive oil until desired consistency is reached.
