Tortilla Pie

I took lasagna and gave it a Mexican spin with this Tortilla Pie filled with seasoned ground beef, a cheesy mixture and topped with more cheese. Serve with a side of guacamole and some sour cream.

Ingredients

  • 1/2 pound 1/2 pound lean ground beef, 90% lean
  • 1/2 cup 1/2 cup chopped onion
  • 2 2 garlic cloves, minced
  • 1 teaspoon 1 teaspoon chili powder
  • 1/2 teaspoon 1/2 teaspoon ground cumin
  • 1 (14-1/2 ounce) can 1 (14-1/2 ounce) can Mexican diced tomatoes drained
  • 3/4 cup 3/4 cup ricotta cheese
  • 1/4 cup 1/4 cup shredded mozzarella cheese
  • 3 tablespoons 3 tablespoons minced cilantro divided
  • 4 4 whole wheat tortillas, 8 inches
  • 1/2 cup 1/2 cup shredded cheddar cheese

Preparation

Step 1

Preheat oven to 400°.

In a skillet cook and crumble beef with onion and garlic over medium heat until no longer pink 4 to 6 minutes certain spices and tomatoes bring to a boil remove from heat.

In a bowl mix ricotta, Mozzarella and 2 tablespoons of cilantro.

Place one tortilla in a 9 inch round baking pan coated with cooking spray. Top with half of meat sauce, add a tortilla and the ricotta mixture. Top with another tortilla and the remaining meat sauce. Add the remaining tortilla and sprinkle with cheddar cheese and remaining cilantro.

Bake covered until heated through 20 to 25 minutes.
