Ingredients
- 2 tbsp butter
- 1/4 cup chopped onion
- 2 cups chopped carrots
- 3 cups chicken or vegetable broth
- 1/4 cup orange juice
- 3 tsp. grated orange rind (optional)
- sour cream
- sliced scallion or chives
- salt & pepper

Preparation
Step 1
Sautee onion in butter until soft. Add carrots and broth. Simmer for about 20 minutes or until carrots are very tender. Season with salt & pepper. Puree in food processor or blender with orange juice and rind. Garnish with dab of sour cream and chives.
